My favorite is to fill with cream cheese filling and strawberries but you could really fill with anything! And these really work well with sweet or savory!<br />

{Crepes}<br />
1 c. four<br />
1 Tbs. sugar<br />
1/4 tsp. salt<br />
3 eggs<br />
2 c. milk<br />
1 Tbs. vanilla<br />
2 Tbs. butter, melted<br />
<br />
1. Sift dry ingredients together in bowl and set aside.<br />
2. In large bowl, beat eggs. Then beat in milk and vanilla. Beat in flour mixture slowly until mixed well.<br />
3. Stir in melted butter quickly to incorporate fully (before it hardens back up). Chill batter for 40 min-1 hour (1 hour is best).<br />
4. Keep crepe pan on medium (my stove it's 3 1/2-4 on number scale). Spray with nonstick spray (works best!). Pour a small amount of batter (1/3+ cup) into pan and quickly swirl pan around to cover the entire bottom.<br />
5. When the crepe begins to bubble and brown on edges, flip over to other side by gently jerking the pan to loosen the crepe, or use a spatula.<br />
6. Place on paper towel and cover with foil.<br />
7. Re-spray pan between each crepe.<br />

{Cream Cheese Filling}<br />
1 (8 oz) block cream cheese<br />
1 c. Confectioners sugar<br />
1/2 Tbs. lemon juice<br />
1 Tbs. vailla<br />
<br />
Mix well and spread in crepe.<br />

Preheat oven to 350 (F) degrees. Grease or spray a 9 x 13 pan then set aside (For the first time I actually used parchment to line the pan, having left some hanging over the two long sides- and it allowed me to easily pull bars out of the pan.)</div><div class="separator" style="clear: both; color: #333333; font-family: Georgia, serif; font-size: 13px; line-height: 20px; text-align: left;">2.) In a medium bowl add the flour, powdered ginger, salt, baking soda and baking powder. Set aside.</div><div class="separator" style="clear: both; color: #333333; font-family: Georgia, serif; font-size: 13px; line-height: 20px; text-align: left;">3.) In a large bowl, cream the butter and brown sugar until smooth. Add eggs, vanilla, and orange zest and mix well. Stir in cranberries and white chocolate. Assemble dessert by spreading the frosting onto the baked and <em>cooled</em> bars. Sprinkle additional cranberries on top. We didn't know what she was having so we went for a yellow and grey color scheme. The pictures to the right were my inspiration ... I wish I could have pulled off that adorable wreath! Sadly, the camera we took pictures with ended up not working (boo!!) but I think the shower turned out great! Cut the cold butter into small pieces. Cut the butter into the flour (with either a pastry blender or two knives) until the mixture resembles crumbs.</div><div>4. Add chopped pecans into the flour mixture. </div><div>5. Mix the egg and cream together. Add the mixture to the flour mixture. Stir together until just combined. </div><div>6. Turn the mixture onto a cutting board (the dough will be very crumbly). With your hands, push the mixture together and try to form a rectangle. Continue to use hands to keep mixture together and pat down to 3/4 inch thick. Cut the rectangle down the middle and then into triangles. </div><div>1. In a medium mixing bowl (I use whisk attachment on my Kitchenaid), stir together the icing ingredients until smooth. Pour generously over cooled scones. </div><div>2. Allow the icing to set before serving. Especially delicious with coffee!!</div><div>**Optional: sprinkle chopped pecans over the icing before it sets.</div><div><br />
